A shared commissary kitchen and community-focused culinary workspace operating out of Manuscript in Tacoma, Washington.
Operating out of Manuscript during off hours, Epilogue functions as a licensed commissary kitchen and collaborative culinary workspace for mobile food vendors, pop-up chefs, caterers, meal prep businesses, and independent culinary operators seeking an affordable and community-oriented place to work and grow.
But Epilogue was never intended to be just a commissary kitchen.
At the center of the project is The Footnote Project — a community meal initiative built directly into the structure of Epilogue Kitchen Collective. Through the program, participating commissary partners contribute meals that are distributed throughout Tacoma through shelters, public spaces, community partnerships, and free pop-up meal events hosted at Manuscript.
The goal is to create a model where food entrepreneurship and community care directly support one another.
The Footnote Project
The Footnote Project exists to provide free, community-centered meals for under-resourced and food-insecure members of the Tacoma community.
Rather than treating community meals as occasional charity events, Footnote is designed to be an ongoing part of the kitchen itself — integrated directly into how Epilogue operates.
